beginning her education...

in a 3-year program at Le Cordon Bleu (Adelaide), Chef Jen discovers her love for everything food and wine! Fast forward 2 years, she builds her passion through training and working at Hat Restaurants all over Australia. 

​

her curiosity for wine and wine making grows... which throws her directly into a sommelier program and upon completion being sought out by large wine producers to represent various brands.

 

opportunity knocks...

as Chef Jen is invited to compete in MY KITCHEN RULES AUSTRALIA (2012), where she won for her passion, creativity and meticulous execution.

she is making a wave in Bangkok with her passion project "Birdies Hot Chicken"

KIMI KIVIRANNA

sommelier/restaurant manager

A love of food, wine, and travel are the foundation for Kimi

Kiviranna’s tenure in Hospitality. She began her career in the

USA, spending 15 years as a chef before moving into service

management and wine. Her experience ranges from Michelin Star

restaurants in Europe to special event catering in Africa, and

restaurant openings in Singapore, Australia, and across the US.

She has been instrumental in building restaurant training guides,

expanding new venue operations, implementing and managing

esteemed wine programs, and building cellar collections for

private clients.

Kimi was certified as a sommelier by the Court of Master

Sommeliers in 2010. She has earned several more wine

accreditations since then and has been working as a sommelier

and wine educator on three continents for more than a decade.

THOMAS ABD ALI

beverage director

Thomas Abd Ali – born in Paris in 1996 – started his hospitality journey in 2014, moving into cocktail bars in 2016. He trained at the Experimental Cocktail Group, one of Paris’ first cocktail bars, under mentors who shaped some of the city’s most influential bartenders.

​

He then joined Little Red Door, a bar nominated nine times in The World’s 50 Best Bars, holding the French record. He also contributed to a menu nominated in 2020 at Tales of the Cocktail for the World’s Best Cocktail Menu.

​

Most recently, he became Head Bartender at 1802, one of the world’s largest rum bars, featuring over 1,000 rums by the glass, a private bottling program, and its own rum festival. The bar is among 18 world-class venues awarded two Pinnacle Guide pins and has been in the Top 500 Bars since 2019, reaching 66th place in 2022.

A passionate traveler and flavor explorer, Thomas has visited hundreds of cities, distilleries, markets, and bars worldwide. He now leads the beverage program at Birdies Bangkok, always seeking new inspiration and flavors.
